🍳 Instructions

1. Make the Egg Yolks Base:

In a heatproof bowl over a double boiler (or very low heat), whisk egg yolks and sugar constantly until the mixture becomes pale, thick, and slightly warm. Remove from heat and set aside.

2. Whip the Cream:

In a separate bowl, beat the heavy cream with a pinch of salt and vanilla extract until stiff peaks form. Set aside.

3. Blend the Mascarpone:

Gently fold the mascarpone cheese into the whipped egg yolk mixture until smooth. Then fold in the whipped cream gently, trying not to deflate the mixture.

4. Prepare the Coffee:

Pour the cooled strong coffee into a shallow bowl. Quickly dip each ladyfinger into the coffee — just 1–2 seconds per side (don’t soak!).

5. Assemble the Tiramisu:

  • Arrange a layer of dipped ladyfingers at the bottom of your dish.
  • Spread half of the mascarpone cream over the ladyfingers.
  • Repeat with another layer of coffee-dipped ladyfingers.
  • Top with the remaining mascarpone cream.

6. Chill:

Cover and refrigerate for at least 4 hours, preferably overnight, to set and develop flavors.

7. Dust with Cocoa:

Right before serving, sift cocoa powder generously over the top. Slice and enjoy!
