  • 1 cup freshly squeezed lemon juice
  • 1 cup simple syrup made from equal parts sugar and water
  • 4 cups sparkling water
  • Ice cubes
  • Fresh mint leaves for garnish
  • Edible glitter optional, for a sparkly touch

Method
 

  1. In a large mixing bowl, combine the fresh raspberries and simple syrup. Use a muddler or wooden spoon to gently mash the raspberries, releasing their juices.
  2. Add the freshly squeezed lemon juice to the raspberry mixture and stir well to combine.
  3. In a pitcher, combine the raspberry-lemon mixture with the sparkling water, stirring gently to keep the fizz.
  4. Fill serving glasses with ice cubes and pour the raspberry lemonade mixture over the ice.
  5. Garnish each glass with extra fresh raspberries, a sprig of mint, and sprinkle with edible glitter if desired.
  6. Serve immediately and enjoy the refreshing flavors of this delightful mocktail!

Notes

Storage & Reheating:
This mocktail is best served fresh, but you can store any leftovers in the refrigerator for up to 2 days. The sparkling water may lose its fizz, so consider adding more just before serving if desired.
