Method
 

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the almond flour, erythritol sweetener, baking powder, and salt. Mix well.
  3. In another bowl, beat the softened cream cheese, eggs, and vanilla extract until smooth using an electric mixer.
  4. Gradually add the dry ingredients to the cream cheese mixture and mix until fully combined.
  5. Spread the mixture evenly onto the prepared baking sheet, forming a rectangle about 1/4 inch thick.
  6. Bake in the preheated oven for 15-20 minutes, or until the edges start to turn golden brown.
  7. Remove from the oven and let it cool for about 5 minutes, then carefully lift the parchment paper to a cooling rack.
  8. Once cooled, sprinkle cinnamon and powdered erythritol over the surface.
  9. Using a sharp knife, cut the almond flour rectangle into strips, then roll each strip tightly to form the roll-ups.
  10. Brush the roll-ups with melted butter and serve immediately or store for later!
