Method
 

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes, or until it becomes translucent.
  2. Add the minced garlic and diced bell pepper to the pot. Sauté for an additional 2 minutes, stirring frequently.
  3. Stir in the diced chicken breast and cook until no longer pink, about 5-7 minutes.
  4. Add the diced zucchini, chicken broth, dried basil, dried oregano, salt, and pepper. Bring to a boil, then reduce heat to low and let simmer for 15 minutes.
  5. Pour in the heavy cream and stir well to combine. Allow the soup to heat through for an additional 5 minutes.
  6. Add the chopped spinach and lemon juice, stirring until the spinach wilts. Adjust seasonings as needed.
  7. Serve hot, garnished with grated Parmesan cheese if desired.

Notes

Storage & Reheating:
Store any leftover soup in an airtight container in the refrigerator for up to 4 days. To reheat, simply warm it on the stove over medium heat until heated through, stirring occasionally. For frozen soup, thaw in the refrigerator overnight and reheat on the stove.
