Equipment

  • 1 Mixing bowl
  • 1 Electric mixer
  • 1 Baking sheet
  • 1 Parchment paper
  • 1 Spatula

Method

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the softened cream cheese and egg yolks. Mix until smooth and creamy.
  3. In another bowl, beat the egg whites with the cream of tartar and salt using an electric mixer until stiff peaks form.
  4. Gently fold the egg whites into the cream cheese mixture until well combined, being careful not to deflate the egg whites.
  5. Using a spatula, scoop the mixture onto the prepared baking sheet, forming 6 equal-sized rounds.
  6. Bake in the preheated oven for 25-30 minutes, or until the rolls are golden brown and firm to the touch.
  7. Remove from the oven and allow to cool slightly on the baking sheet before transferring to a wire rack to cool completely.

Notes

Storage & Reheating:
Store any leftover cloud bread rolls in an airtight container in the refrigerator for up to 5 days. For reheating, you can warm them in a toaster oven or microwave for a few seconds to restore their softness.
Variations:
- Add herbs like rosemary or thyme to the mixture for extra flavor.
- Mix in 1 tablespoon of nutritional yeast for a cheesy taste.
- Use flavored cream cheese, such as garlic or chive, to enhance taste.
