Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 teaspoons smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • 1 tablespoon fresh lime juice
  • 1/2 cup fresh cilantro leaves
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 small jalapeño chopped (seeds removed for less heat)
  • 1 clove garlic minced

Method
 

  1. In a mixing bowl, combine olive oil, smoked paprika, ground cumin, garlic powder, onion powder, salt, black pepper, cayenne pepper, and lime juice. Mix well.
  2. Add the chicken breasts to the marinade, ensuring they are evenly coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for more flavor.
  3. While the chicken is marinating, prepare the creamy green sauce. In another mixing bowl, combine the cilantro, sour cream, mayonnaise, chopped jalapeño, and minced garlic. Whisk until smooth and well-blended. Season with salt to taste.
  4. Preheat your grill to medium-high heat. Once hot, remove the chicken from the marinade, allowing excess marinade to drip off.
  5. Grill the chicken for about 6-7 minutes on each side, or until the internal temperature reaches 165°F and the chicken is nicely charred.
  6. Transfer the grilled chicken to a serving platter, and drizzle generously with the creamy green sauce. Serve immediately alongside your favorite sides.

Notes

Storage & Reheating:
Store any leftover grilled chicken in an airtight container in the refrigerator for up to 3 days. The creamy green sauce can also be stored separately for the same duration. To reheat the chicken, pop it in the microwave until warmed through or reheat gently on the grill.

- Substitute chicken breasts with chicken thighs for a juicier option.
