Method
 

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the diced chicken breasts to the skillet, seasoning with salt and pepper. Cook for 5-7 minutes until the chicken is cooked through and no longer pink.
  3. Add the minced garlic and grated ginger to the skillet, stirring for about 1 minute until fragrant.
  4. Toss in the sliced bell pepper, broccoli florets, and snap peas. Stir-fry for an additional 5 minutes until the vegetables are tender but still crisp.
  5. Pour the soy sauce and sesame oil over the chicken and vegetables, mixing well to combine. Cook for another 2 minutes to heat through.
  6. Serve hot, garnished with sesame seeds and chopped green onions if desired.
