White Chocolate Raspberry Tiramisu – Creamy, Fruity, and No-Bake Elegance

This White Chocolate Raspberry Tiramisu is a fresh, elegant twist on a classic dessert—light, creamy, and bursting with berry flavor. Instead of the traditional coffee-soaked layers, this version highlights vibrant raspberries and silky mascarpone, creating a dessert that feels bright, indulgent, and perfectly balanced. The contrast is what makes this tiramisu unforgettable: tart raspberry syrup soaked into delicate ladyfingers, layered with a fluffy mascarpone cream and finished with grated white chocolate. It’s a no-bake dessert that looks impressive, slices beautifully, and tastes even better after chilling. Ideal for celebrations, holidays, or anytime you want a refined dessert without turning on the oven.

Ingredients

For the Raspberry Syrup
  • 4 cups raspberries fresh or frozen
  • ½ cup water
  • ¾ cup granulated sugar
  • 1 tablespoon lemon juice
For the Mascarpone Cream
  • 1 ½ cups heavy cream
  • 16 ounces mascarpone cheese
  • ¾ cup granulated sugar
  • ¾ cup raspberry syrup from above
  • 1 teaspoon vanilla extract
For Assembly
  • 1 package savoiardi ladyfingers 7 oz, about 24
  • 1 ounce white chocolate finely grated

Equipment

  • Medium saucepan
  • Fine mesh strainer (optional)
  • Mixing bowls (large and medium)
  • Electric mixer or whisk
  • Rubber spatula
  • Measuring cups and spoons
  • 8×8-inch or similar serving dish
  • Grater (for white chocolate)

Method

Step 1: Add raspberries, water, granulated sugar, and lemon juice to a medium saucepan.
Step 2: Cook over medium heat, stirring occasionally, until the raspberries break down and the mixture thickens slightly.
Step 3: Remove from heat and allow the mixture to cool. Strain if you prefer a smooth syrup, or leave as is for a more rustic texture.
Step 4: In a large bowl, whip the heavy cream until stiff peaks form. Set aside.
Step 5: In another bowl, gently mix the mascarpone cheese and granulated sugar until smooth and creamy.
Step 6: Add vanilla extract and ¾ cup of the cooled raspberry syrup to the mascarpone mixture. Mix gently until fully combined.
Step 7: Carefully fold the whipped cream into the mascarpone mixture using a spatula, keeping the texture light and airy.
Step 8: Quickly dip each ladyfinger into the remaining raspberry syrup, coating lightly without soaking.
Step 9: Arrange a single layer of dipped ladyfingers in the bottom of your serving dish.
Step 10: Spread half of the mascarpone cream evenly over the ladyfingers.
Step 11: Sprinkle a portion of grated white chocolate over the cream layer.
Step 12: Add a second layer of dipped ladyfingers on top.
Step 13: Spread the remaining mascarpone cream evenly over the second layer.
Step 14: Finish with the remaining grated white chocolate on top.
Step 15: Cover and refrigerate for at least 4 hours, preferably overnight, to allow the layers to set.
